Your Minecraft will probably UPDATE to 1.13 next week and it’s very likely that it’s going to take A WHILE for SERVERS to be able to UPDATE –

DISABLE YOUR YOUR APPS FROM AUTO-UPDATING IMMEDIATELY IF YOU WANT TO CONTINUE PLAYING DURING THAT TIME

iOS
Open up the Settings app.
Tap on iTunes & App Store. Under the section titled Automatic Downloads, you’ll see an item called Updates.
Tap on the toggle switch to turn it off so that it goes from green to gray.
If it’s already gray, then the setting is already changed and there’s nothing you need to do further.

Android
Open Google Play.
Tap the hamburger icon (three horizontal lines) on the top-left.
Tap Settings. Tap Auto-update apps.
To disable automatic app updates, select Do not auto-update apps.

Windows
Select the Start screen, then select Microsoft Store.
In Microsoft Store at the upper right, select the account menu (the three dots) and then select Settings.
Under App updates, set Update apps automatically to Off
